Description:
The dish features succulent chicken breasts that are marinated in a mixture of olive oil, lemon juice, garlic, and herbs before being grilled to perfection. The highlight of this recipe is the creamy lemon butter sauce that adds a burst of flavor to each bite.
Ingredients:
- Main Ingredients:
- 6 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice and zest of 2 lemons
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Lemon Butter Sauce:
- 4 tablespoons unsalted butter, softened at room temperature
- Juice of 2 lemons
- 1/4 cup chopped fresh parsley
- 1 tablespoon capers (optional)
- Salt and pepper to taste
- Garnish:
- Fresh lemon wedges
- Cooked pasta or rice for serving
How To Cook:
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, basil, salt, and pepper. Place the chicken breasts in a large resealable plastic bag or shallow dish.
- Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours (or up to overnight).
- Preheat your grill to medium-high heat. Remove the chicken from the marinade, letting any excess drip off.
- Grill the chicken breasts for about 6-7 minutes per side or until they reach an internal temperature of 165°F (74°C). Let them rest for a few minutes before slicing.
- To make the lemon butter sauce, in a small bowl mix together softened butter, lemon juice, chopped parsley, capers if using, and salt and pepper to taste. Stir until well combined.
- Drizzle some of the lemon butter sauce over each chicken breast or serve it on the side for dipping.
